What kind of problems should I avoid and what good advise can you give?

OK first things first. Make sure you have a good backup every night. Take the backup off site every day. You should have at least 10 tapes and rotate them. Take the tapes of site in case the building burns down. Believe me it happens.

Install all of the latest service Packs for Exchange. In exchange Service Pack 2 there is a tool called the Intelligent message filter. Make sure you use it.
If you only have 20 users and are running Exchnage, the best way and easyst way would be to run Microsoft Exchnage Small Business Server. plus it is cheaper to purchase then stand alone Server 2003 and stand alone Exchange. Plus all of the cool stuff like Outlook Web Access and SharePoint is already installed.
Reply:1) Install good anti-virus on it
2) take regular back-up on tape drive
3) never use or install any un-authorised software it will cause your system to work slow
4) do not work on e-mail sever until you don't have any problem regarding it
Reply:make sure the employees retain their passwords and know how to clean out their spam on the exchange server so it doesnt crash like our companys did. also if your company has multiple offices and are using various connection companies make sure you have the setting info on hand to avoid kaos.
